"Savor Summer with This Simple Tomato Basil Pasta"

Tomato Basil Pasta

Ingredients:

  • 1 lb (450g) spaghetti or your favorite pasta
  • 4-5 large tomatoes, diced
  • 4 cloves garlic, minced
  • 1/4 cup (60ml) olive oil
  • 1/2 cup (120ml) vegetable or chicken broth
  • 1/2 cup (120ml) dry white wine (optional)
  • 1/2 cup (about 20g) fresh basil leaves, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Prepare the Sauce:

    • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add Tomatoes:

    • Add the diced tomatoes to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatoes start to break down and release their juices.
  4. Add Broth and Wine:

    • Pour in the vegetable or chicken broth and white wine (if using). Simmer for another 5 minutes to allow the flavors to meld together. Season with salt and pepper to taste.
  5. Combine Pasta and Sauce:

    • Add the cooked pasta to the skillet with the tomato mixture. Toss well to combine, adding reserved pasta water as needed to loosen the sauce.
  6. Finish with Basil:

    • Stir in the chopped fresh basil leaves just before serving, reserving a few for garnish.
  7. Serve:

    • Divide the pasta among serving plates. Sprinkle with grated Parmesan cheese and extra basil leaves. Serve hot and enjoy!

Tips:

  • For a richer flavor, you can add a tablespoon of butter along with the olive oil when sautéing the garlic.
  • Adjust the amount of garlic and basil according to your taste preference.
  • This dish pairs well with a crisp green salad and a glass of white wine.
